A real bank vault. A full-time pit.
Before it was a smokehouse, 2900 Canton Rd was a bank, and the vault is still standing. We kept it, gave the place a jailhouse theme, and called it Lockdown. The idea is simple: good barbecue takes time, so we give it plenty.
Every brisket is rubbed with a seasoning we grind ourselves and smoked for fourteen hours over real hickory. Ribs get the same rub, then a glaze of our First Timer sweet sauce and a last kiss on the grill. The sides are made from scratch. Nothing comes out until it's ready.
