Q: IS THE CATERING CUSTOMIZABLE?
Yes. Our catering experts customize menus to fit the style and guest expectations of your event. We consider personal dietary and budgetary restrictions, too. Whether it be ordering menu items for pick up à la carte, customizable catering options, or late-night bites for the pre/post-party, we’ve got you covered.
Q: WHAT SAUCES COME WITH MY MEAL?
Choose up to 2 of our Original Homemade Sauces: First Timer Sweet, Chang Gang Spicy, Jail House Smoky, Lockdown Original Sauce, or Pokey Mustard.
We have other Homemade BBQ sauces offered for additional purchase by the bottle. Our Purchasable Sauce List includes Bama White, Country Sweet Tea, Chipotle Cilantro, Sweet Cookin’ Tamarind, Carolina Vinegar, Bacon Bourbon, Boozy Berry, Triple “S”, Guns & Roses, Tastebud Kicker Sweet Burn, Night Fury Dragon, Peach Mango Habanero, Hotbox Flaming Hot, Harvest, Fallen Applen, Jamaican Jerk, and Korean BBQ.
Q: WHAT IS THE PORTION SIZE PER PERSON?
1 pound of meat will feed about 2-3 people depending on how much variety your menu has. To feed larger parties we recommend no more than two pulled/sliced meats.
Ribs and wings are portioned based on how many pieces you would like per person, and we suggest they should be offered in addition to the meat you will need for everyone to have a sandwich.
All sides can feed 4-5 people per quart.
Again, this depends on the amount of variety your menu has.
Q: HOW MANY BUNS OR TEXAS TOAST COME WITH THE DELIVERY BUFFET AND THE FULL-SERVICE CATERING OPTIONS?
We provide one bun or Texas toast per person. Additional buns (12) or a loaf of Texas toast can always be added to your order for $5.00.
Q: DO YOU HAVE ANY VEGETARIAN OR GLUTEN-FREE OPTIONS?
We have vegetarian-friendly options including: Garden Salad, Cheese Baked Potato, and Veggie Burger.
Garden Salad is a blend of lettuce, with cucumber, tomatoes, 3 blend cheese, and your choice of dressing on the side.
Cheese Baked Potato is a baked potato topped with butter and cheese; jalapenos, sour cream, and BBQ sauce are served on the side.
A veggie burger is topped with lettuce and tomato with your choice of BBQ sauce, mustard, and mayo on the side.
Our vegetarian side includes Mac & Cheese, Cole Slaw, Potato Salad (contains egg), Corn on the Cob, and Broccoli.
We can separately box this in place of the meat portion for vegetarians.
Q: WHAT KIND OF PAPERWARE IS INCLUDED?
We provide all serving utensils (spoons and tongs).
Plates, cups, bowls, and Eating utensil packs (with a fork, knife, napkin, and salt/pepper packets), can be ordered for $1.25 per guest.
Q: DO I NEED TO CONFIRM MY ORDER?
It’s important to confirm your order and make sure we have all the information we need to make your party the best it can be. Confirmations will be provided via our Catering Booking Form. Unconfirmed orders will not be guaranteed. We cannot accept changes, cancellations, or confirmations through voicemail.
Q: CAN I MAKE SAME-DAY OR LAST-MINUTE ORDERS, OR CHANGES TO MY EXISTING ORDERS?
There’s a special method to cooking pit-smoked BBQ, and that means slow-smoking to perfection. While we can’t guarantee that we’ll be able to take your last-minute order, we’ll do our best to fulfill your desires. To make changes to your existing order, just give us a call during business hours and provide at least 24 hours' notice.
Q: HOW MUCH NOTICE DO YOU NEED AND HOW FAR CAN YOU DELIVER?
We require a 24-hour notice to ensure BBQ availability.
Delivery radius from a restaurant and minimum food subtotal required.
Under 5 miles - $25.00
5-10 miles - $35.00
10-15 miles $50.00
More than 15 miles is possible with an additional delivery charge. Contact our Catering Expert
Q: IS GRATUITY INCLUDED?
For Pick-Up, Delivery, and Full Service, gratuity is not included but tips are always appreciated.
For Full Service, 18% of your food subtotal will be added as a service fee. This includes a delivery driver who will set up your buffet, serving utensils, plates, cutlery, napkins, wire racks, sternos & water pans to keep your food warm for up to 3 hours. Simply have a table and tablecloth ready and we'll handle the rest! Buffet service and clean-up can be included for an additional charge. We will tend the buffet and answer guest questions, consolidate the buffet as the meal progresses, and clean everything up afterward.
(3 Hour Minimum $300+ $100 for each additional hour per server.)
Time starts from departure of the establishment to arrival back.
Driver gratuity is optional and greatly appreciated, but not included in the full-service fee.
Q: WHEN DO I GET MY RECEIPT?
We will provide a copy of your receipt upon delivery or pick up. If you need this emailed to you, let the Catering Expert know and we will send it over to you.
Q: WHEN DO I FINALIZE MY GUEST COUNT?
About 10 days out, we will want to finalize the guest count and you can adjust the balance at that time if needed. We will still have wiggle room for last-minute increases the week leading up to the event, but this will allow our team to forecast food ordering and staff scheduling.
Q: HOW MUCH TIME MUST I PROVIDE TO BOOK A CATERING?
Advance notice is much appreciated and highly recommended. The more notice we have, the better.
For Pick-up & Delivery, we require 24-hours notice to ensure BBQ availability, but we’ll do our best if you call even on the day of the event.
For Full-Service, we require 2 weeks' notice. Less than 2 weeks' notice? Contact us if you need accelerated timing.
Q: HOW DO I CONFIRM AN ORDER?
For Pick-up, paid in-store at the time of pick-up or in advance.
For Delivery, full payment needs to be paid in advance.
For Full-Service, full payment is required to confirm your event. A 50% deposit may also be taken for full-service to reserve your event date and time.
Q: WHAT IS YOUR REFUND POLICY?
For Pick-up & Delivery, please let us know if you want to cancel 24 hours in advance via email. We will send a confirmation of the cancellation.
For Full-Service, if you cancel within 1 week of your event date, we reserve the right to retain your full deposit. Cancellation fees may apply without timely notice.
Q: WHEN IS THE REMAINING BALANCE DUE IF I ONLY PAY 50% UPFRONT?
The final balance will be due on the event day. Typically, we charge the same credit card used for the deposit unless notified otherwise.
Q: DOES MY CATERING COME WITH HEATING ELEMENTS?
This will depend on the type of catering service you order. All of our catering options are delivered in equipment made to keep food hot during transit.
Boxed Lunches & Delivery Buffet: We will deliver your food and have it set up about 15 minutes prior to your foodservice time. We do not provide wire racks so if you plan on having the food sit out for longer than an hour (i.e. an open house, graduation party, or wedding), Sternos & Wire Rack Combo is available for purchase under extras.
Full Service: This is recommended for events with over 100 guests and will come with staff and heating elements (Chafing Dishes and Sterno Sets).
Q: WHAT SIZE ARE THE PANS?
We deliver our food in half pans: 11 3/4” x 9 3/8” x 2 9/16”. Two of our half pans fit inside a full-size pan used in a wire rack. Full-size pans: 20” x 12 3/16” x 3 3/8”.
Q: HOW MANY SERVERS COME WITH FULL-SERVICE CATERING?
The total staff and number of service lines are dependent on the style and size of the event. We provide approximately two servers per 100 guests. Additional staff may also be brought in to handle dessert and beverage stations.
